Together Hemp Heart Tabouli Side Salad

Swapping out bulgur for Hemp can make this traditional Mediterranean salad grain-free, keto, and packed with a huge nutritional boost that's delicious as a side, or topping in wraps, and pitas.

Ingredients:

  • 1 Cup Natural Hemp Hearts
  • 1 Cup Fresh Parsley
  • 4 Medium Vine Tomatoes
  • 1/2 Cucumber
  • Onion
  • 1/2 Cup Fresh Mint
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Hemp Seed Oil, or Olive Oil
  • 1/4 Teaspoon Salt

Directions:

  1. Finely chop parsley and mint leaves.
  2. Dice cucumber, tomato and onion.
  3. Mix lemon juice, salt, oil, parsley, mint, hemp hearts and add diced vegetables
  4. Refridgerate and serve!
